Winemaking
Gentle “orange” vinification process, though the Moschofilero is a grey-skinned and not white variety. Grapes of best quality from privately-owned vineyards are harvested after approaching the maximum of maturity. A long extraction with a part of stems lasts for 20 days and the fermentation is spontaneous, with indigenous yeasts. Afterwards, the wine is transferred for maturation in clay amphoras. After 6 months of maturation, it is bottled unfiltered and without any fining agents. The philosophy for the X•mf is oriented to a low intervention winemaking. The bottled wine ages for a long time in the winery’s cellar room.
Taste features – Aging
A particular wine of a light red color with orange hues. Intense floral aromas, especially rose ones. Truffle, quince, dried red fruit and herbaceous aromas are also predominant. A full body with balanced acidity and soft tannins give structure and a long aftertaste. It can be further aged for 3 to 5 years.
Ideal food combination
Pasta with highly aromatic or spicy red sauces, Mediterranean cuisine with significant presence of tomatoes and olives, mushroom soup.
