THALASSITIS is our classic Santorini.
For THALASSITIS we select exclusively Assyrtiko from the indigenous vineyards of Episkopi, Akrotiri and Pyrgos, 80 years old on average, with a particularly low yield per hectare, which rarely exceeds 350 kilos per hectare.
The winemaking takes place entirely in stainless steel tanks. The result is a clean, strict wine, with the variety and terroir having the ultimate say. This highlights the main characteristics of the region: sharp acidity, robust structure and saltiness, clean and refined aromas with the famous minerality taking center stage. It is no coincidence that this type of winemaking is the “classic style” of the island that has now defined the typicality of Assyrtiko.
Like any serious Assyrtiko from Santorini, Thalassitis has an aging potential that is recommended at 2-3 years, during which the wine noticeably "rounds out", while at the same time a steady strengthening of the mineral character is observed, as well as the appearance of more mature and sweet aging aromas.
THALASSITIS is best enjoyed during a meal and prefers flavors of moderate aromatic intensity, where salty, sour or fatty dominate. Decant it into a wide carafe about half an hour before enjoying it.
